Salpicão, made from the pork (pig) loins. The loin is marinated in special traditional spice sauces for 3 to 4 days. After the meat has absorbed the taste of the spices the smoking process starts using oak wood as the old tradition passed on through generations. This product can be eaten raw, fried or boiled and it can be served with rice, potato or a simple salad. In Portugal it is eaten raw with a good wine and the traditional home made bread as a snack. The Salpicão has a spicy aroma and an intense flavour.
