Rabaçal cheese is an artisan semi-hard to hard ewes’ milk cheese which is produced in the province of Beira Litoral, 200 km north of Lisbon. It is made with a mixture of ewes’ and goats’ milk. The cheese is made with animal rennet and may have a few small irregular holes. The taste and aroma of the cheese reveal the special nature of the regional flora which serves as pasture for the sheep. It weighs approx. beteween 500g to 600g and the interior is a dull white.
