Chorizo

Chorizo, in a horseshoe shape, the fist step is a combination of pork meat cut in small peaces, marinated in a special traditional spice sauces for 3 to 4 days, then the meat is marinated again in red wine, bay leaves, pepper paste and sweet pepper, the process of smoking goes through 3 steps of different temperatures using oak wood. It can be roasted or fried with a bit of oil, or cooked, and it can be served with rice, potato or a simple salad. In Portugal it is fried with fire water and served as a starter with a good wine and the traditional home made bread. The chorizo has a spicy aroma and an intense flavour.

Serrano Ham

Serrano Ham, This Serrano ham has the coveted D.O., or guarantee of origin. The hams are produced in small quantities and cured in natural conditions. The ham has a sweet aroma and an intense flavour.
The pig from Alentejo (Iberian) is descended from the wild boar that still exists in Portugal but is a protected species; they are the last swine race of pasture in Europe. This race is bread by organic methods, nourished by fresh grass, acorn and aromatic plants this will reflect the distinctive flavour of the Serrano ham. Cheese

Portugal is a land of extensive green pastures perfect for cattle-rearing; as the Portuguese saying goes, ‘in the land of cattle, cheese is king”. The most popular Portuguese cheese, the "Serra da Estrela", is a sheep cheese, made in the Serra da Estrela region, where the highest peak of Portugal Mainland. Its smooth consistency and delicate flavour are very much comparable to the best Bries. In a country of mountains and fine pasture lands, ideal for the raw material to produce milk for cheese making it is an important industry for employment. Portugal currently produces upwards of 13 PDO, “Protected Designation of Origin” status cheese made from goat’s, cow and sheep milk. The trade secrets have been passed from generation to generation and still to this day, cheeses are made by hand. This give a variety of different cheeses from regions to regions offering a texture, flavour and shapes unique to our Nation.
